Rainbow Marshmallow Fudge

A rainbow of coloured marshmallows in a square of rich dark or milk chocolate fudge…for kids of all ages.

Prep Time: 15 minutes plus chilling time

Serving: about 2 lb (1 kg)

INGREDIENTS

3 cups (750 mL) semi-sweet or milk chocolate chips,

2 tbsp (30 mL) butter, 1 can (300 mL)

Regular Eagle Brand

sweetened condensed milk,

Pinch salt,

1 tsp (5 mL) vanilla extract,

2 cups (500 mL) coloured miniature marshmallows

PREPARATION:

1. Melt chocolate chips with butter, Eagle Brand and salt. Remove from heat; stir in vanilla.

2. Fold in miniature marshmallows.

3. Spread evenly onto parchment paper-lined 8 x 8″ (2 L) square pan.

Chill 2 hours or until firm.

Cut into squares.
